Knowledge of wine-making spread throughout Europe, and yet 2,000 years on the Greeks find themselves playing only a small part in the global drinks business. One place where great wine is still made is the island of Santorini, it’s volcanic soil imparting great mineral depth and complexity. Using the indigenous Assyrtiko grape, this fine example shows off a lemon and lime freshness accompanied by a bright acid whoosh. It is believed that Socrates, after draining an amphora of Santorini wine similar to this, uttered his most famous saying “I only know that I know nothing”, before passing out cold with his head in the lap of Dionysus.

Domaine Sigalas have been making wine on Santorini since 1991 and now produce 7 different bottles; 3 white, 3 red and a vin santo. Some of the Assyrtiko vines used for this wine are staked out as normal, while others, to protect them from savage winds, are trained into a basket shape which lies on top of the earth.
